Avocado on Toast 

A quick and easy recipe to assemble with minimal hassle, this makes the perfect light lunch or supper, and a delicious starter at a dinner party. The refreshing, creamy flavours offer something rather luxurious and combined together, act friendly towards the waistline!

Serves 1 lucky person

Ingredients 

1 ripe avocado
Juice from half a lemon
Half a clove of garlic, crushed 
(Cook's note ~ if you can get hold of some smoked garlic, it adds something rather special to the flavour)
Salt & Pepper
1 slice of good sourdough bread

Cook's note ~ if you like things rather spicy, turn up the heat by adding some chopped chilli!

For serving:

3 slices of good-quality parma ham

Method

v  Cut the avocado in half and remove the stone. Scoop the flesh out into a bowl and add the crushed garlic and lemon juice.

v  Using a fork, crush the avocado into a salsa-like consistency with medium-sized chunks. Season to taste with salt and pepper.

v  Drizzle the plain olive oil over the bread and toast both sides under the grill.

v  Spoon the avocado onto the toast and drizzle with the garlic infused oil.

v  Serve with a heap of parma ham.
